How on earth are you suppose to prepare amazing dinners, great tasting breakfasts and delicious afternoon tea's, all whilst juggling your other responsibilities, and still make it out on the slopes everyday?
Cooking is a huge part of the chalet host role but it's so much more than just whipping up a few nice recipes. It takes practice and passion to succeed. So if you commit the time and effort, we will bring you the knowledge and support, through this course, to get you there.
Designed as a 7 day cooking program, let us guide you step-by-step through the week, building your skills and confidence along the way. The course will not only give you the opportunity to learn how to prepare the types of meals you are required to make as a chalet host, but it will also challenge you to combine them to deliver a full days chalet cooking.
By the end of the week you will understand, not just how to cook like a chalet host, but how to apply your skills to bring an entire menu together seamlessly, delivering delicious food for your guests with minimal stress for you.

We love cooking, but we also love skiing! If we're honest, we only started chalet hosting as we hoped it would give us maximum time out on the hill. And we weren't wrong! If you can get the balance right, chalet hosting will give you the chance to spend loads of time enjoying the mountains.
Over the many winters we have spent chalet hosting we have developed ways of working that allow us to deliver great food and service without compromising on our standards, all whilst getting maximum time to get out and ski!
We continue to take a lot of pride in delivering great tasting, homecooked food and have worked to fixed menu plans, as well designing and delivering our own, winning praise from satisfied guests over the years.
When we aren't out chalet hosting we can be found serving the most amazing wood-fired pizza's to customers in Cornwall, or passing on our top-tips on how to cook like a chalet host on our residential courses. It would seem that cooking has become almost as an important part of our lives as skiing (well...almost!!).

Regardless of any pervious cooking experience, this course is uniquely designed to get you cooking and thinking like a chalet host. For those with experience in hospitality or catering, this course will refine your skill set and teach you the specific techniques you need to cook to the standards required of a chalet host. For those with limited culinary skills, this course will take you step-by-step through the basic's to ensure you learn good techniques, and help you to confidently prepare and serve delicious meals.
There is a lot to learn so we have broken the course into various chapters which you can work your way through. Following the step-by-step programme, the course will take you at least 7 days to complete. You do not have to complete these days consecutively but you should do them in order to get the most value. You can start and stop the course as often as you like so can learn at a pace that suits you.
Online teaching is increasingly recognised as effective means of learning. Being able to work at home at your own pace, this online course is completely flexible and comes at a great price. You can work in your own kitchen, accessing all the course material, to produce meals for your friends and family to try.
This course specifically covers the cooking skills of chalet hosting. Many companies recognise that having this experience, be that via a residential or online course, demonstrates your commitment to learning about the chalet host role. With a log book to back up and evidence all your culinary skills, this course can be seen as a valid alternative to the cooking aspect of any residential course. For a more holistic understanding of the chalet host role we would recommend you also complete the cleaning and hosting courses, which you can purchase separately or as part of a bundle.
To complete the course you will need some general pieces of kitchen equipment. It is anticipated that you will have most of these items and so we do not expect you to have to purchase any additional equipment. We provide a list of essential equipment items at the start of the course so you know what you need and each lesson has a video introduction to confirm the equipment you will use each day.
You will need access to a laptop or tablet to view the lessons and it will be helpful to have a smartphone on which to upload any photos you take along the way. You will need Adobe Acrobat reader to complete the logbook and instructions on how to download this can be found within the course.
Yes. You do not need to sign up for, or book onto, any other courses run by Fresh Tracks Chalet Hosting and Cookery School. We would however recommend that you check out our other courses that are available which give you even more knowledge, information and confidence to carry out the other essential aspects of the chalet host role. In order to gain your Level 2 Fresh Tracks Cooking Certificate, you must complete the whole course. You will be required to submit a photo at the end of each day of the step-by-step cooking programme to demonstrate you have practically carried out the tasks set. Your logbook does not need to be submitted. You logbook is for your own records to track your own progress and demonstrate your participation on the course.
